this week kicks off my jump start to a healthier me. as i've rudely been reminded from several assholes people while chowing down on french fries or dessert (my weaknesses), i'm getting married in less than 6 months! crazy to think. although i think it's totally rude to bring up a "wedding diet" in front of a bride-to-be (f off), it has gotten me thinking i should probably start watching what i put into my body a litttttle more than i usually do. before you say you want to kill me, i'm not planning on going on a psychotic diet to lose a bunch of weight before the big day, i just want to tone up a bit. i want to not only look good but feel good on my wedding day (who doesn't?). obviously in june and july, i want to cut back a little more than normal, but it's not a bad idea to start eating a little healthier now, right?
so, in the spirit of healthy munching, i made kale chips last night. i have to say, for my first time making them, they were not half bad. BUT i apparently made the mistake of putting them in a ziploc bag to store, and, to my surprise, they were wilted and chewy when i tried to snack on them today. not exactly the "crunch" i had in mind. i'm going to have to do some more digging to figure out how to keep them crispy. but i gotta say, for someone who is not a veggie lover, they were pretty tasty! i'm looking forward to attempting them again. and this time, crunchy kale chips.
this is the before picture...and i forgot to take an after pic. sorry, i'm an idiot. in my defense, i was really into grey's anatomy last night. and this morning, they didn't look so picturesque in a plastic bag. i promise to document my next attempt.
i also nabbed some almonds, 100 calorie popcorn packs, hummus & carrots and nature valley granola bars from the grocery. if you haven't noticed, i like to snack throughout the day ;) i'm not a big "big breakfast" eater. anyone else have any great healthy snack/meal tips to share?
